Freyia Labs was born from the intersection of two passions: Vasilis’s drive to reinvent food through fermentation, and Greta’s lifelong commitment to healthy, sustainable living. Vasilis, with a background in marketing and a love for experimentation, began working with fermented foods and quickly recognised the inefficiencies and inconsistencies plaguing small producers. Greta, a corporate lawyer with 15 years of experience, brought the structure and resilience needed to turn this vision into a business.
Together, they launched a line of functional fermented products but soon realised the real bottleneck was not product innovation, it was the lack of intelligent, accessible tools to support fermentation at scale. This insight led to the creation of F.O.R.S.E.T.I.X.
As the idea evolved, they brought on a team of developers, AI/ML experts, and product leaders who shared the vision. What started as a small business has become a deeptech company working to reshape how fermentation is done, from the ground up.
